Maalum Cassava Flour

Updated: Nov 12, 2021

Cassava comes from Yuca, a Tuberous Root also know as Manioc.

Tapioca Flour is the starch derived from Cassava, whereas Cassava Flour is derived from the entire root, thus it's distinct higher fiber content. 🤗

Cassava Flour is a grain-free and gluten-free and acts as a fantastic replacement for wheat flour in many cases, and can be used to make bread, pancakes, pasta, crackers and waffles!

What You Need For The Cassava Chocolate Chip Cookie Recipe

  • 1 Cup Maalum Cassava Flour

  • 1/3 Cup Raw Honey

  • ¼ Cup Sugar

  • 1 Egg

  • ½ Teaspoon Baking Soda

  • ½ Teaspoon Baking Powder

  • ¼ Teaspoon Fine Salt

  • 1 Cup Dark Chocolate Chips

  • ½ Cup Softened Butter

Optional Item You Can Add Depending On What You Love

  • Dark Chocolate Shavings for Garnish

Cooking Method

  1. Preheat your oven to 350 Degrees Celsius and line a large Baking Sheet with Parchment Paper.

  2. Using a Hand Mixer, cream together the Butter, Honey, Sugar and Vanilla until smooth.

  3. Add in the Egg and beat on low speed until well combined with the other ingredients.

  4. In a separate bowl, combine the dry ingredients, then add the dry mixture into the wet, beating on low speed until smooth.

  5. Stir in Chocolate Chips, then chill the dough for 15 minutes in the Fridge.

  6. Using a Medium Cookie Scoop, scoop dough onto prepared Cookie Sheet about 2 inches apart since they will spread a bit while baking.

  7. Bake in the preheated Oven for 10 minutes until the cookies are golden brown.

  8. Allow the cookies to cool completely on the baking sheet (transferring them as they cool makes them very delicate due to the cassava flour texture).

  9. Once completely cool to the touch, remove from the Baking Sheet and Serve.

  10. Drizzle with Garnish of your choice.
